Raspberry Muffins

Ingredients:RaspberryMuffins

For the base:

1/2 cup almonds (soaked over night)

1/2 cup dates ((soaked 30 minutes)

1 Tbsp cacao powder

1 Tbsp coconut milk

1 Tbsp agave nectar

For the topping:

1/2 cup cashews (soaked one hour)

1/2 cup raspberries

1 tsp coconut milk

1 tsp agave nectar

Methods/steps:

For the base:  Mix all the ingredients together in a food processor and place in muffin liners – I placed mine in the silicone muffin cups to keep shape.

For the topping: Blend all together and then decorate the muffins by spoon or knife.

Granola Bars

Ingredients:Granola Bars

7 Tbsp oat flakes

5 dried plums

3 Tbsp almonds

1 Tbsp ground flax seeds

1 Tbsp coconut flakes

1/2 banana

1 tsp raw cacao powder

1 tsp cinnamon

1 tsp agave nectar

1 tsp sunflower seeds

1 tsp sesame seeds

Methods/steps:

In a food processor, combine all ingredients (except sunflower seeds and sesame seeds), until desired consistency has been reached. If you’d like larger pieces in your bars, pulse mixture a few times, then finish combining with a spatula.

Wet hands, then press mixture into a pan lined with parchment paper.

Bake 10-15 minutes, then remove from oven and using a very sharp knife, gently cut bars into desired size.

Chia pudding

Ingredients: ChiaPudding

1/4 cup sesame seeds

1 cup water

2 tbsp chia seeds

1/2 tsp cinnamon

pinch of stevia powder

Methods/steps:

How to make sesame seeds milk:

Blend the  sesame seeds with the water until smooth (approximately 2 minutes). Pour the mixture through a strainer into a large bowl, pressing with the back of a spoon to extract as much liquid as possible.

Stir together the chia seeds,  sesame seeds milk, cinnamon,  stevia powder and let it rest for few minutes.

Decorate with Goji berries and black sesame seeds.
